Perfect Crispy Skinned Jacket Potatoes

Jacket potatoes are the ultimate choose-your-own-adventure comfort food, and the flavour of our sustainable Welsh spuds makes this humble dish a proper treat. Pricking the potatoes before roasting ensures they don’t burst before they’re cooked through, and the salt helps the skins to turn crispy, while the inside stays tender.

Ingredients
  • 4 large Root Zero Potatoes
  • 2 tbsp flaky sea salt
  • To serve: salted butter
  • Jacket potato filling of your choice
Directions
  1. Preheat the oven to 220℃
  2. Rinse the potatoes under cold water, and pat dry, then prick each a few times with the prongs of a fork. Tip the salt into a shallow bowl, then roll the (still slightly wet) potatoes in the salt. Transfer to a roasting tray.
  3. Cook for about an hour, after which time the potatoes should “give” when squeezed. If not, continue to cook for another 5-10 minutes until they do.
  4. Transfer to plates and split open before dropping a slice of salted butter in each, along with your favourite filling (baked beans; cheese; tuna & sweetcorn; leftover roasted veg or meat - the list is endless!)

    TOP TIP: For a more energy efficient cooking method, why not cook in the air fryer! Set your air fryer to 200℃ and cook for 40-50 minutes!
